Roasted Veggie Medley- One Pot Dish

This veggie medley is so easy and quick to make. Full of healthy ingredients- makes for a perfect side dish.

Ingredients⠀(Makes 8 servings)⁠⠀


  • 1 lb baby carrots⁠⠀

  • 1 lb green beans cut in half⁠⠀

  • 3 red onions, peeled and thinly sliced⁠⠀

  • 2 red bell peppers- thinly sliced⁠⠀

  • 2 yellow bell peppers- thinly sliced⁠⠀

  • 8 sprigs fresh thyme⁠⠀

  • 5 cloves of garlic or 1 tbsp garlic powder- optional⁠⠀

  • 1 tsp paprika or black pepper⁠⠀

  • Salt to taste⁠- I added about 1 tbsp

  • 1/2 cup olive oil⁠⠀

  • 1 1/2 tbsp dried basil⁠⠀


Instructions


  • Preheat oven to 400degrees F.⁠⠀

  • Line a shallow baking tray with aluminum foil.⁠⠀

  • Spread baby carrots, green beans, onions, peppers, thyme sprigs on baking sheet.⁠⠀

  • Sprinkle with salt and pepper/paprika.⁠⠀

  • Whisk garlic, olive oil, basil, salt and pepper together in a small bowl. Pour the mixture over vegetables and toss to coat evenly.⁠⠀

  • Roast for 20 minutes.⁠⠀

  • Using a wide spatula, turn vegetables.⁠⠀

  • Roast 15-25 minutes more, until tender⁠⠀
