I prefer making a batch of these and freezing it for later use. It is quick to make on those busy days when you want to eat healthy yet not ready to cook. Pop in the microwave or heat on a skillet, add some vegan mayo to the bun, add your favorite toppings, and voila- healthy vegetarian burger.
Here's how to make this yummy vegetable tikkis:
½ cup cauliflower, ¼ cup carrots and peas (both mixed)
Onion 1 medium
2 green chilies
Oil 2 tablespoons
Red chili powder 1/2 teaspoon
Roasted cumin seeds powder (Roasted Jeera powder)1/2 teaspoon
Garam masala powder 1/2 teaspoon
Chaat masala 1 teaspoon
Salt to taste
2 tbsp chickpea flour (Chana no lot) mixed with water into a thin, liquid paste
Bread crumbs 1 cup
Finely chop onion and green chilies. Heat oil in a non-stick pan, add onion and green chilies and saute till translucent.
Put the vegetables in a chopper and chop finely and add to the pan. Saute for 5 to 6 minutes, stirring.
Add red chili powder, roasted coriander seeds powder, garam masala powder, chaat masala, salt and mix well.
Transfer this mixture into a bowl. Let it cool.
Divide the mixture into equal portions and shape each portion into a round Tikki.
Dip the tikkis into the chickpea flour and then dip into bread crumbs
Heat oil in a non-stick pan and shallow fry the Tikki, turning sides, till golden brown on both sides. Drain on absorbent paper.
Place the Tikki on a serving plate, garnish with mint leaves, onion rings. Sprinkle some chaat masala and serve with sweet potato fries and date chutney on the side.
Alternatively, you can add the Tikki in between two buns and make a yummy vegetable burger adding vegan mayo and some pickles.
